ABSTRACT

To evaluate the prevalence of untreated caries and its association with biological, individual, and environmental variables in independently-living elderly people. Methods: This cross-sectional study included 72 elderly (≥60 years) patients of a university dental clinic in Belo Horizonte, Brazil. Sociodemographic data, systemic diseases, medications, and free sugar intake were collected. Visible plaque, Decayed, Missing, and Filled Teeth (DMFT), and Decayed and Filled Root (DFR) indexes were assessed through clinical examination. Unstimulated saliva was collected to determine salivary flow, pH, and buffering capacity. Descriptive analysis and multilevel logistic regression analysis were performed following a dental caries theoretical model (p <0.05, 95% CI). Results: The mean DMFT and DFR were 24.44 (SD=4.59) and 3.21 (SD=2.93), respectively. The prevalence of untreated caries was 61.11%. In the adjusted multilevel regression model involving 1639 teeth, untreated dental caries was significantly associated with the presence of biofilm (OR = 1.84; 95% CI: 1.24­2.74), salivary buffering capacity (OR = 0.87; 95% CI: 0.77­0.99) and per capita income (OR = 0.06; 95% CI: 0.004­0.74). Conclusion: The experience of dental caries was widespread among independently-living elderly patients, and its variability was best explained by the presence of biofilm, reduced salivary buffering capacity, and low per capita income. A comprehensive assessment is needed of the biological, individual, and environmental factors related to the presence of dental caries in independently-living elderly people

ABSTRACT OBJECTIVE To investigate the performance of food consumption markers of the Food and Nutrition Surveillance System (Sisvan) in assessing the overall dietary quality. METHODS The study was carried out based on the reproduction of responses to markers in 24-hour recall data from 46,164 individuals aged ≥ 10 years, from the 2017-2018 Household Budget Survey (POF). Seven Sisvan markers were evaluated, and two scores were calculated for each participant, based on the sum of the number of healthy food markers (beans, fruits, and vegetables, ranging from 0 to 3) and unhealthy (hamburgers/sausages, sweetened beverages, instant noodles/salt snacks/crackers, stuffed cookies/sweets/candies, ranging from 0 to 4) consumed. Linear regression analyses were used to assess the association between scores and diet quality indicators (ultra-processed foods, dietary diversity, and levels of saturated and trans fat, added sugar, sodium, potassium, and fiber in the diet). RESULTS The score of healthy eating markers increased significantly with increasing dietary diversity and potassium and fiber contents in the diet, while the opposite trend was observed for the densities of added sugar, sodium, saturated and trans fat (p < 0.001). The score of unhealthy eating markers increased significantly with the increase in the consumption of ultra-processed foods and densities of added sugar, saturated and trans fat levels in the diet, while an inverse trend was observed for potassium and fiber (p < 0.001). The joint analysis of the combination of the two marker scores showed that individuals with better performance (3 in the healthy food score, and 0 in the unhealthy food score) have a lower number of inadequacies in nutrient consumption. CONCLUSION Sisvan food consumption markers, quickly and easily applied and already incorporated into the Brazilian public health system, have good potential to reflect the overall dietary quality.


RESUMO OBJETIVO Investigar o desempenho dos marcadores do consumo alimentar do Sistema de Vigilância Alimentar e Nutricional (Sisvan) na avaliação da qualidade global da alimentação. MÉTODOS O estudo foi realizado a partir da reprodução de respostas aos marcadores em dados de recordatórios de 24 horas, de 46.164 indivíduos com idade menor ou igual a 10 anos, da Pesquisa de Orçamentos Familiares 2017-2018. Foram avaliados sete marcadores do Sisvan e calculados dois escores para cada participante, a partir do somatório do número de marcadores de alimentação saudável (feijão, frutas, verduras/legumes, variando de 0 a 3) e não saudável (hambúrguer/embutidos, bebidas adoçadas, macarrão instantâneo/salgadinhos/biscoitos salgados, biscoito recheado/doces/guloseimas, variando de 0 a 4) consumidos. Análises de regressão linear foram usadas para avaliar a associação entre os escores e indicadores de qualidade da alimentação (participação de alimentos ultraprocessados, diversidade e teores de gordura saturada, trans, açúcar de adição, sódio, potássio e fibra da dieta). RESULTADOS o escore de marcadores de alimentação saudável aumentou de forma significativa com o aumento da diversidade e dos teores de potássio e fibra da dieta, enquanto tendência oposta foi observada para as densidades de açúcar de adição, sódio, gordura saturada e trans (p < 0,001). Observou-se que o escore de marcadores de alimentação não saudável aumentou de forma significativa com o aumento da participação de alimentos ultraprocessados e dos teores de açúcar de adição, gordura saturada e trans da dieta, enquanto tendência inversa é observada para potássio e fibra (p < 0,001). A análise conjunta da combinação dos dois escores de marcadores mostrou que indivíduos com melhor desempenho (3 no escore de alimentos saudáveis, e 0 no de alimentos não saudáveis) possuem menor número de inadequações no consumo de nutrientes. CONCLUSÃO Os marcadores do consumo alimentar do Sisvan, aplicados de forma rápida e prática e já incorporados no sistema público de saúde brasileiro, possuem bom potencial para refletir a qualidade global da alimentação.

ABSTRACT

The cases of feeling comfort during acupuncture and moxibustion treatment in literature were summarized and its biological basis was explored. A simple classification of comfort was made, and the importance of obtaining comfort in acupuncture treatment was pointed out. Considering the pursuit of less pain and harmlessness in modern clinical treatment, sugar needle should be advocated and popularized in current clinical practice of acupuncture and moxibustion.

ABSTRACT

In this study, the authors cloned a glycosyltransferase gene PpUGT2 from Paris polyphylla var. yunnanensis with the ORF length of 1 773 bp and encoding 590 amino acids. The phylogenetic tree revealed that PpUGT2 belonged to the UGT80A subfamily and was named as UGT80A49 by the UDP-glycosyltransferase(UGT) Nomenclature Committee. The expression vector pET28a-PpUGT2 was constructed, and enzyme catalytic reaction in vitro was conducted via inducing protein expression and extraction. With UDP-glucose as sugar donor and diosgenin and pennogenin as substrates, the protein was found with the ability to catalyze the C-3 hydroxyl β-glycosylation of diosgenin and pennogenin. To further explore its catalytic characteristic, 15 substrates including steroids and triterpenes were selected and PpUGT2 showed its activity towards the C-17 position of sterol testosterone with UDP-glucose as sugar donor. Homology modelling and molecule docking of PpUGT2 with substrates predicted the key residues interacting with ligands. The re-levant residues of PpUGT2-ligand binding model were scanned to calculate the corresponding mutants, and the optimized mutants were obtained according to the changes in binding affinity of the ligand with protein and the surrounding residues within 5.0 Å of ligands, which had reference value for design of the mutants. This study laid a foundation for further exploring the biosynthetic pathway of polyphyllin as well as the structure of sterol glycosyltransferases.

ABSTRACT

To investigate the antidepressant mechanism of Shenling Kaixin Granules(SLKX) in treating chronic unpredictable mild stress(CUMS) model rats. Ninety male SD rats were randomly divided into control group, model group, Shugan Jieyu Capsules(110 mg·kg~(-1)) group and SLKX low-(90 mg·kg~(-1)), medium-(180 mg·kg~(-1)), and high-dose(360 mg·kg~(-1)) groups. Depression rat model was replicated by CUMS method. After treatment, the behavioral changes of rats were evaluated by sugar preference, open field, elevated cross maze and forced swimming experiments. The contents of interleukin 1 beta(IL-1β), tumor necrosis factor α(TNF-α), brain-derived neurotrophic factor(BDNF) and 5-hydroxytryptamine(5-HT) in serum were determined by enzyme linked immunosorbent assay(ELISA), and the activities of superoxide dismutase(SOD) and catalase(CAT) in hippocampal CA1 region were also detected. Pathological changes in hippocampal CA1 region were detected by hematoxylin-eosin(HE) staining, and Western blot was used to determine the expression of nerve growth factor(NGF), BDNF, phospho-tyrosine kinase receptor(p-TrkB)/TrkB, phospho-cAMP-response element binding protein(p-CREB)/CREB, nuclear factor E2 related factor 2(Nrf2), heme oxygenase 1(HO-1), B-cell lymphoma-2(Bcl-2)/Bcl-2 associated X protein(Bax) and caspase-3 in hippocampal CA1 region. RESULTS:: showed that compared with the control group, the model group had decreased sugar preference, reduced number of entries and time spent in the center of open field and shortened total distance of movement, reduced number of entries and proportion of time spent in open arm, and increased number and time of immobility in forced swimming experiment. Additionally, the serum contents of IL-1β and TNF-α and the expression of caspase-3 were higher, while the contents of BDNF and 5-HT, the activities of SOD and CAT in hippocampal CA1 region, the expressions of NGF, BDNF, p-TrkB/TrkB, p-CREB/CREB, HO-1 and Bcl-2/Bax, and the Nrf2 nuclear translocation were lower in model group than in control group. Compared with the conditions in model group, the sugar preference, the number of entries and time spent in the center of open, total distance of movement, and the number of entries and proportion of time spent in open arm in treatment groups were increased while the number and time of immobility in forced swimming experiment were decreased; the serum contents of IL-1β and TNF-α and the expression of caspase-3 were down regulated, while the contents of BDNF and 5-HT, the activities of SOD and CAT in hippocampal CA1 region, the expressions of NGF, BDNF, p-TrkB/TrkB, p-CREB/CREB, HO-1, Bcl-2/Bax, and Nrf2 nuclear translocation were enhanced. In conclusion, SLKX might regulate the Nrf2 nucleus translocation by activating BDNF/TrkB/CREB pathway, lower oxidative stress damage in hippocampus, inhibit caspase-3 activity, and reduce apoptosis of hippocampal nerve cells, thereby playing an antidepressant role.

ABSTRACT Objective To evaluate the consumption of free sugars and associated factors in the diet of university students entering full-time courses at a public university in Mato Grosso. Methods Cross-sectional study with students aged 16 to 26 years in the first semester of 2016, 2017, and 2018. Average sugar consumption was estimated using a 24-hour diet recall, evaluating the percentage of free sugars in total energy intake and the prevalence of consumption greater than 10.0% of total energy intake, according to socioeconomic and lifestyle variables, stratified by sex, and the foods that most contributed to its consumption. Results A total of 1,063 students were evaluated, the percentage of free sugars in the students' diet was on average 14.3% among men and 15.4% among women, with the prevalence of consumption above 10.0% also being higher among women (72.6 vs. 66.6%). There was a direct relationship between the participation of free sugars in the highest tertiles of energy intake, and the main food groups sources of sugar were desserts, juices, soft drinks, and coffee. There was a significant association between courses outside the health sciences, tobacco use, and unsatisfactory meal consumption profile with higher consumption of free sugars among women. Among men, sugar consumption was higher among those who were not overweight compared to those who were overweight. Conclusion The consumption of free sugars is high among university students, being associated with higher energy consumption, especially for sweetened beverages.


RESUMO Objetivo Avaliar o consumo de açúcar livre e os fatores associados na alimentação de universitários ingressantes em cursos de período integral em uma universidade pública de Mato Grosso. Métodos Estudo transversal com estudantes de 16 a 26 anos de idade no primeiro semestre de 2016, 2017 e 2018 (n=1.063). O consumo médio de açúcar foi estimado por meio de recordatório de 24 horas, sendo avaliada a participação do açúcar livre na ingestão energética total e a prevalência de participação do consumo superior a 10,0% da ingestão energética, segundo variáveis socioeconômicas, de estilo de vida e fatores dietéticos, , estratificadas por sexo. Resultados A participação do açúcar livre na dieta foi, em média, de 14,3% entre os homens e 15,4% entre as mulheres, sendo a prevalência de consumo acima de 10,0% também maior entre as mulheres (72,6 vs. 66,6%). Foi maior a participação do açúcar livre nos tercis mais elevados de ingestão energética, sendo verificado que os principais grupos de alimentos fontes foram sobremesas, sucos, refrigerantes e café. Entre as mulheres, verificou-se maior consumo de açúcar livre entre aquelas que faziam uso de tabaco e que apresentavam perfil de consumo de refeições insatisfatório. Por outro lado, menor consumo de açúcar livre foi observado entre as estudantes da área da saúde. Entre os homens, o consumo de açúcar livre foi maior entre aqueles sem excesso de peso, comparados aos com excesso. Conclusão O consumo de açúcar livre foi elevado entre estudantes universitários, sendo maior entre os estudantes com maior consumo energético. Verificou-se que as bebidas adoçadas estiveram entre as principais fontes.

Aim: The consumption of foods rich in sugar is linked to several non-communicable diseases, including dental caries. Coconut sugar has systemic benefits due to its lower glycemic indexes (GI) than other table sugars. However, there is currently no data regarding its ca-riogenic potential. This study aimed to evaluate the effect of coconut sugar on acidogenicity and adhesion of Streptococcus mutans in vitro, compared to sugarcane products. Materials and methods: Aliquots of cultu-res of S. mutans UA159 were resuspended in a buffer solution enriched with coconut sugar, crystal sugar (refined sugar), and minimally processed sugarcane (demerara light brown sugar and maskavo dark brown sugar), as well as positive (sucrose) and negative con-trols. The decrease in pH and its corresponding area under the curve (AUC; cm2) were evaluated for the analysis of acidogenicity. S.mutans was incubated in BHI supplemented with each sugar and the percentages of microbial adhesion were calculated. After testing data normality, the one-way ANOVA test (Bonferroni post hoc) was used to compare the AUC and the pro-portion of adhesion of each group. Results: Regarding the acidogenic potential, statistical differences were found only between the negative control versus all other groups (p<0.001). Likewise, no significant difference in adhesion was found between the tested sugars (p>0.05). Discussion: Although the tested sugars are marketed as "healthy products," their amount and frequency of usage should be controlled. Conclusion: Coconut su-gar presents a similar cariogenic potential to that of sugarcane products when acidogenicity and adhesion are evaluated. Coconut sugar is not indicated as a substitute for sucrose in the control of cariogenic activity.


Objetivo: O consumo de alimentos ricos em açúcar está associado a diversas doenças não transmissíveis, incluindo a doença cárie. O açúcar de coco tem benefícios sistêmi-cos devido aos seus índices glicêmicos (IG) mais baixos do que outros açúcares de mesa. No entanto, atualmente não há dados sobre seu potencial cariogênico. Esse estu-do teve como objetivo avaliar o efeito do açúcar do coco na acidogenicidade e adesão de Streptococcus mutans in vitro, em comparação com produtos derivados da cana--de-açúcar. Materiais e métodos: alíquotas de culturas de S. mutans UA159 foram suspensas em solução tampão enriquecida com açúcar de coco, açúcar cristal (açúcar refinado) e cana-de-açúcar minimamente processada (açúcar mascavo demerara claro e açúcar mascavo), além de controles positivo (sacarose) e negativo. A diminuição do pH e correspondente área sob a curva (AUC; cm2) fo-ram avaliadas na análise de acidogenicidade. S. mutansfoi incubado em BHI suplementado com cada tipo de açúcar e as porcentagens de adesão microbiana foram calculadas. Após testar a normalidade dos dados, o teste ANOVA de uma via (Bonferroni post hoc) foi utilizado para comparar a AUC e a proporção de adesão de cada grupo. Resultados: Em relação ao potencial acidogênico, diferenças estatísticas foram encontradas apenas entre o controle negativo versus todos os outros grupos (p <0,001). Não foi encontrada diferença significativa na adesão en-tre os açúcares testados (p> 0,05). Discussão: Apesar dos açúcares testados serem comercializados como "produtos saudáveis", sua quantidade e frequência de consumo deve ser controlada. Conclusão: O açúcar do coco apresenta potencial cariogênico semelhante à dos produtos da cana-de-açúcar quanto a acidogenicidade e a adesão. O açúcar de coco não é indicado como substituto da sacarose no controle da atividade cariogênica.

ABSTRACT

Se realizó una revisión bibliográfica sobre los efectos de azúcares totales sustitutos de sacarosa sobre el estado de salud bucal. Los artículos científicos fueron localizados en bases de datos científicas digitales: Scopus, PubMed, Web Of Science y Ovid. Las fuentes empleadas son de libre acceso, 49 de los manuscritos fueron descartados, quedando 23. El 43,5% de los artículos mostraban resultados de ensayos clínicos sobre las gomas de mascar con xilitol, el 39,1% acerca de otros compuestos (stevia, magnolia, eritritol, fostato de calcio), el 13% revisiones narrativas y el 4,4% metaanálisis. Las gomas de mascar hechas con sustitutos de sacarosa estimulan la producción salival, neutralizan y elevan su pH, reconociéndosele su función promotora de salud bucal en varias publicaciones científicas. Los efectos anticariogénicos del xilitol están establecidos en diversos estudios. No existen suficientes estudios sobre los efectos de las sustancias: stevia, d-tagatosa, magnolia, eritritol y fostato de calcio.


A bibliographic review was carried out on the effects of sucrose substitute total sugars on the state of oral health. The scientific articles were in the following digital scientific databases: Scopus, PubMed, Web of Science and Ovid. The sources used were freely accessible, 49 of the manuscripts gotten by the search were discarded and 23 were used. 43.5% of the articles inclu-ded showed results of clinical trials on chewing gums with xylitol, 39.1% about other com-pounds (stevia, magnolia, erythritol, calcium phosphate), 13% narrative reviews and the 4.4% meta-analysis. Chewing gums made with sucrose substitutes stimulate salivary production, neutralize and raise its pH. That is why, its role in promoting oral health is recognized in several scientific publications. The anticariogenic effects of xylitol were established in various studies. There were not enough studies on the effects of the substances: stevia, d-tagatose, magnolia, erythritol and calcium phosphate

RESUMO Objetivo: investigar a duração do sono (DS), a frequência de despertares noturnos (DN) e o consumo de alimentos açucarados no primeiro ano de vida e verificar a associação entre o consumo desses alimentos e a má qualidade do sono. Métodos: a população do estudo foi composta de 179 crianças integrantes de uma coorte de nascimentos de Rio Largo-AL. As mães foram questionadas sobre a oferta regular de alimentos açucarados (açúcar/farinhas de cereais instantâneas com açúcar/bebidas açucaradas/doces) e o sono foi investigado pelo questionário traduzido e validado Brief Infant Sleep Questionnaire. Foram considerados indicadores de má qualidade do sono DS<12h e DN>2. Os testes de qui-quadrado de Pearson e exato de Fisher foram adotados para verificar associações entre o consumo de açucarados e a má qualidade do sono aos seis e 12 meses (p<0,05). Resultados: mais da metade das crianças apresentou DS<1 2h (60,3%) e cerca de » DN>2. O consumo regular de pelo menos uma das categorias de açucarados foi verificado entre 50,6, 91,1 e 100% das crianças aos três, seis e 12 meses de idade, respectivamente. Não foram encontradas associações entre o consumo desses alimentos e os indicadores de má qualidade de sono. Conclusão: o consumo de açucarados e a má qualidade de sono foram frequentes em nosso estudo, no entanto, não se identificou associação entre as variáveis. Mais investigações são necessárias para elucidar como o sono e a alimentação se inter-relacionam e se potencializam mutuamente como fatores determinantes do crescimento e desenvolvimento de lactentes.


RESUMEN Objetivo: investigar la duración del sueño (DS), la frecuencia de despertares nocturnos (DN) y el consumo de alimentos azucarados en el primer año de vida y verificar la asociación entre el consumo de estos alimentos y la mala calidad del sueño. Métodos: la población de estudio consistió en 179 niños de una cohorte de nacimiento en Rio Largo-AL. Se preguntó a las madres sobre el suministro regular de alimentos azucarados (azúcar / harinas de cereales instantáneas con azúcar / bebidas endulzadas / dulces) y se investigó el sueño mediante el cuestionario traducido y validado BriefInfantSleepQuestionnaire. Fueron considerados indicadores de mala calidad del sueño DS <12h y DN> 2. Se utilizaron las pruebas de chi-cuadrado de Pearson y exacta de Fisher para verificar las asociaciones entre el consumo de azúcar y la mala calidad del sueño a los seis y 12 meses (p <0.05). Resultados: más de la mitad de los niños tenían DS <1 2 h (60,3%) y alrededor de » DN> 2. Se verificó el consumo regular de al menos una de las categorías azucaradas entre el 50,6, el 91,1 y el 100% de los niños a los tres, seis y 12 meses de edad, respectivamente. No se encontraron asociaciones entre el consumo de estos alimentos y los indicadores de mala calidad del sueño. Conclusión: el consumo de azucarados y la mala calidad del sueño fueron frecuentes en nuestro estudio, sin embargo, no se identificó asociación entre las variables. Se necesita más investigación para dilucidar cómo el sueño y la alimentación se interrelacionan y se mejoran mutuamente como determinantes del crecimiento y desarrollo infantil.


ABSTRACT Objective: to investigate sleep duration (SD), frequency of night awakenings (NA) and consumption of sugary foods in the first year of life and to verify the association between consumption of these foods and poor sleep quality. Methods: the study population consisted of 179 children from a birth cohort in Rio Largo-AL. Mothers were asked about the regular supply of sugary foods (sugar/instant cereal flours with sugar/sweetened drinks/sweets) and sleep was investigated by the translated and validated Brief Infant Sleep Questionnaire. DS<12h and AN>2 were considered indicators of poor sleep quality. Pearson's chi-square and Fisher's exact tests were used to verify associations between sugary consumption and poor sleep quality at six and 12 months (p<0.05). Results: more than half of the children had SD<1 2h (60.3%) and about » AN>2. Regular consumption of at least one of the sugary categories was verified among 50.6, 91.1 and 100% of children at three, six and 12 months of age, respectively. No associations were found between the consumption of these foods and indicators of poor sleep quality. Conclusion: sugary consumption and poor sleep quality were frequent in our study; however, no association was identified between the variables. More investigations are needed to elucidate how sleep and feeding are interrelated and mutually potentiate as determinants of infant growth and development.

Resumen Se pretendió desarrollar una fórmula artesanal, a base de lactosuero, como complemento alimenticio para niños preescolares. Se realizó una investigación descriptiva ejecutada en tres fases: 1. Ensayos preliminares para la determinación del esquema tecnológico; 2. Evaluación fisicoquímica para la caracterización del producto y determinación de macronutrientes y 3. Evaluación sensorial donde se midió el nivel de agrado del producto final. Los datos obtenidos de los análisis se tabularon en cuatro repeticiones y se analizaron a través de estadísticas descriptivas de tendencia central y en frecuencias expresadas en tablas y gráficos mediante el programa estadístico SPSS versión 20.0. Se obtuvo que en el análisis proximal del requesón deshidratado, éste aportó por cada 100 gramos de producto: 480,28 kcal, 46,5% de proteínas, 22,36% de grasas y 23,26% de hidratos de carbono. La formulación final de la bebida constó de 2,9 g de requesón deshidratado, 3,6 g de arroz previamente cocido y 1,8 g de azúcar diluidos por cada onza preparada. Se determinó que es una fórmula hipocalórica-hiperproteica e isoosmolar, con una viscosidad de 275cP, un pH de 5,1 y con 0,291% de ácido láctico. La fórmula artesanal a base de lactosuero fue de agrado para 41 niños que participaron en el análisis sensorial. Se recomienda su uso en niños que se encuentren en condición de vulnerabilidad nutricional.


Abstract The main objective of this research was to develop an artisan formula based on whey as food supplement directed to preschool children. It was a descriptive study carried out in three phases: 1. Preliminary tests, for the determination of the technological scheme; 2. Physical-chemical evaluation, for the characterisation of the product and determination of nutrients and, 3. Sensory evaluation: the level of satisfaction of the final product measured. The data obtained from the analysis were tabulated in four repetitions and analysed through descriptive statistics of central tendency and in frequencies expressed in tables and graphs using the statistical program SPSS version 20.0. As a result, for each 100 grams of dehydrated cottage cheese this malnuprovides: 480.28 kcal, 46.5% protein; 22.36% fat and 23.26% carbohydrates. The final formulation of the drink consisted of 2.9 g of dehydrated cottage cheese, 3.6 g of previously cooked rice and 1.8 g of diluted sugar for each prepared ounce. It was determined as a hypocaloric-hyperproteic and isomolar formula, with a viscosity of 275cP, a pH of 5.1 and with 0.291% lactic acid. The artisan formula based on whey was liked by 41 children who participated in the sensory analysis. As a conclusion, it can be recommended as food supplement in children with nutritional vulnerability conditions.


Resumo O objetivo principal desta pesquisa foi desenvolver uma fórmula artesanal à base de soro de leite como suplemento alimentar direcionado a crianças pré-escolares. Foi realizado um estudo descritivo em três fases: 1. Ensaios preliminares, para determinação do esquema tecnológico; 2. Avaliação físico-química, para caracterização do produto e determinação de macronutrientes e 3. Avaliação sensorial: mediu-se o grau de satisfação do produto final. Os dados obtidos das análises foram tabulados em quatro repetições e analisados por meio de estatísticas descritivas de tendência central e em frequências expressas em tabelas e gráficos utilizando o programa estatístico SPSS versão 20.0. Como resultado da análise proximal, para cada 100 gramas de requeijão desidratado fornece: 480,28 kcal, 46,5% de proteína; 22,36% de gordura e 23,26% de carboidratos. A fórmula artesanal à base de soro de leite foi apreciada por 41 crianças que participaram da análise sensorial. É recomendado seu uso em crianças que se encontrem em condições de vulnerabilidade nutricional.

Background: Dental caries remains a public health threat of concern among children. About 2.3 billion people are affected by dental caries, of which 530 million are children globally. Objective: This study was carried out to identify sugar fermenting bacteria in the oral cavity and their antibiotic susceptibility pattern, assess the association with sugar fermenter bacteria and dental caries and evaluate dental caries outcomes among children. Materials and Methods: This was a cross-sectional study conducted between October 2021 and February 2022 at Ruhengeri Referral Hospital. About 136 oral swab samples were collected from children with and without dental caries at 1:1 ratio. The samples were put in Stuart sterile container and transported to INES-clinical microbiology laboratory for microbial identification. Logistic regression analysis of demographic characteristics was performed to study the relationship between demographic variables and dental caries. Chi-square test was performed for the association between variables. Results: About 67.6% were male, while children of age 7­9 years (64.7%) dominated the age groups. Lactobacilli spp (15.29%) and Streptococcus mutans (12.94%) were the most predominant microorganisms observed in the oral cavity among children with dental caries. The S. mutans (x2 = 27.03, P < 0.00001, 95% confidence interval [CI]=0.2901­0.5785), S. aureus (x2 = 34.59, P < 0.00001, 95% CI = 0.3541­0.6292), Enterobacter aerogenes (x2 = 13.5, P = 0.000239, 95% CI = 0.151­0.4622), Serratia marcescens (x2 = 11.64, P = 0.00645, 95% CI = 0.1275­0.4418) and Klebsiella pneumonia (x2 = 13.51, P = 0.000237, 95% CI = 0.1511­0.4623) were significantly associated with dental caries. Teeth loss (x2 = 51.04, P < 0.00001, 95% CI = 0.4757­0.7205), teeth pain (x2 = 5.05, P = 0.0246, 95% CI = 0.0249­0.33499), and infection (x2 = 4.73, P = 0.02964, 95% CI = 0.0186­0.3441) were dental outcomes associated with tooth decay. Ciprofloxacin, clindamycin, and amoxicillin were the most sensitive antibiotics, while vancomycin and chloramphenicol were the most resistant. Conclusion: Sugar consumption favours the growth of sugar fermenter bacteria that cause dental caries among children. Dental caries is associated with adverse oral health outcomes among children. Oral health education is recommended for children. Parents are advised to reduce the consumption of sugary food for their children for oral health safety.

ABSTRACT

Traditional medicine systems around the globe, like Unani, Ayurveda and traditional Chinese medicine, include a number of sugar-based formulations, which contain a large amount of saccharide-containing sweetener, such as honey, sucrose or jaggery. With pervasive lifestyle disorders throughout the world, there have been discussions to consider alternative sweetening agents. Here, from the perspective of Unani medicine, we discuss how the saccharide-based sweeteners may be an essential component of these traditional preparations, like electuaries, which may be deprived of their bioactivities without these saccharides. With contemporary researches, it is known that apart from their own therapeutic effects, saccharides also form deep eutectic solvents which help in enhancing the bioactivity of other ingredients present in crude drugs. In addition, they provide energy for fermentation which is essential for biotransformation of compounds. Interestingly, the sugars also increase the shelf-life of these compound drugs and act as natural preservatives. On the basis of this review, we strongly believe that saccharide-based sweeteners are an essential component of traditional medicines and not merely an excipient.

Existe una creciente evidencia de la transición global en los sistemas alimentarios que afectan la disponibilidad, accesibilidad, asequibilidad y conveniencia de los alimentos altamente procesados. El objetivo de este trabajo fue evaluar el consumo aparente de energía, grasas saturadas, azúcares agregados y sodio según el grado de procesamiento de los alimentos en la Argentina entre 1996 y 2018, según el nivel de ingreso. Se trata de un estudio descriptivo y transversal, con datos de gastos de alimentos y bebidas e ingresos de la Encuesta Nacional de Gastos de los Hogares de 1996-1997, 2004-2005, 2012-2013 y 2017-2018, que incluye más de 20.000 hogares en cada período. Se calculó el consumo aparente diario de energía, grasas saturadas, azúcares agregados y sodio por adulto equivalente de: (1) alimentos mínimamente procesados; (2) ingredientes culinarios procesados; (3) alimentos procesados y (4) productos ultraprocesados, para cada periodo y según el quintil de ingresos per cápita del hogar. Fue utilizado análisis estadístico descriptivo. En energía y todos los nutrientes evaluados, se observa la reducción de la proporción proveniente de alimentos mínimamente procesados, ingredientes culinarios y alimentos procesados, y el aumento de productos ultraprocesados. Con una mayor contribución a partir de ultraprocesados, a medida que aumentan los ingresos del hogar, pero con diferencias que disminuyen a lo largo del tiempo. Dados los resultados, las estrategias futuras en Argentina deberían promover el consumo de alimentos mínimamente procesados y desalentar la disponibilidad y accesibilidad de alimentos ultraprocesados, con especial énfasis en los grupos más vulnerados.


Growing evidence of the global transition in food systems exists, affecting the availability, accessibility, affordability, and convenience of highly processed foods. This study aimed to evaluate the apparent consumption of energy, saturated fat, added sugars, and sodium according to the degree of food processing in Argentina from 1996 to 2018 and according to income level. This is a descriptive and cross-sectional study with data on food and beverage expenditures and income from the National Household Expenditure Survey for years 1996-1997, 2004-2005, 2012-2013, and 2017-2018, including more than 20,000 households in each period. The apparent daily consumption of energy, saturated fat, added sugars, and sodium per adult for: (1) minimally processed foods; (2) processed culinary ingredients; (3) processed foods; and (4) ultra-processed products, was calculated for each period and according to per capita income quintile in each household. Descriptive statistical analysis was performed. Reductions in the proportion of energy and all nutrients evaluated from minimally processed foods, culinary ingredients and processed foods were observed, as well as an increase in the consumption of ultra-processed products. One also observes a greater share from ultra-processed foods as household income increases but with decreasing differences over time. Therefore, future strategies in Argentina should promote the consumption of minimally processed foods and discourage the availability and accessibility of ultra-processed ones, especially for the most vulnerable groups.


Cada vez mais há evidências sobre a mudança global nos sistemas alimentares, que envolvem disponibilidade, acessibilidade, custo e pertinência dos alimentos ultraprocessados. O objetivo deste trabalho foi analisar o consumo aparente de energia, gorduras saturadas, açúcar e sódio conforme o nível de processamento de alimentos e a renda familiar na Argentina no período entre 1996 e 2018. Estudo descritivo e transversal, realizado com dados sobre o consumo de alimentos e bebidas e a renda familiar obtidos da Pesquisa Nacional de Consumo Domiciliar de 1996-1997, 2004-2005, 2012-2013 e 2017-2018, que inclui mais de 20.000 residências em cada período. Foi calculado o consumo diário de energia, gordura saturada, açúcar e sódio por adulto equivalente a partir de: (1) alimentos minimamente processados; (2) ingredientes culinários processados; (3) alimentos processados e (4) alimentos ultraprocessados, para cada período e de acordo com o quintil de renda familiar per capita. Foi aplicada análise estatística descritiva. Em relação à energia e aos nutrientes analisados, foi encontrada uma redução na proporção de alimentos minimamente processados, ingredientes culinários e alimentos processados, e um aumento de alimentos ultraprocessados. O consumo de alimentos ultraprocessados é maior conforme aumenta a renda familiar, mas com diferenças que diminuem ao longo do tempo. Esses resultados evidenciam a necessidade de promover estratégias na Argentina quanto ao consumo de alimentos minimamente processados e desestimular a disponibilidade e o acesso a alimentos ultraprocessados, especialmente para os grupos mais vulneráveis.

ABSTRACT

A cana-de-açúcar e a cana energia são plantas intercruzáveis que compõe o complexo Saccharum. Estas plantas são fonte de biomassa para produção de açúcar, biocombustíveis, eletricidade, entre outros, e utilizam a energia assimilada pela fotossíntese de forma contrastante, ainda que ambas resultem em alta produtividade. O relógio biológico é um mecanismo molecular que gera informações sobre a hora do dia em conjunto com estímulos ambientais, adaptando respostas fisiológicas em prol de otimizar o desenvolvimento dos organismos em um ambiente cíclico, processo que regula cerca de 64% dos genes de cana-deaçúcar no campo. Em organismos sésseis como as plantas, o recorrente processo de produção de energia apenas durante o período luminoso, gera ritmos de metabólitos que influenciam na atividade de enzimas quinases que assim funcionam como sensores do estado energético, em vias conservadas nos eucariotos. Porém, pouco se sabe a respeito de como estes sinais são percebidos a nível transcricional, principalmente em plantas cultiváveis. Para elucidar como estas vias atuam em conjunto em plantas do complexo Saccharum, medimos o nível de transcrição de componentes do relógio biológico, de subunidades que compõe o complexo TOR, e da subunidade catalítica de SnRK1, KIN10. Medimos o desempenho do relógio biológico das variedades através da quantificação de amido em quatro pontos temporais, para obter uma dinâmica de produção e consumo, processo que é regulado pelo relógio biológico e tem genes com perfil de expressão rítmicos em cana de-açúcar. Curiosamente, uma das quatro variedades onde identificamos provável perfil rítmico de consumo de amido é a S.officinarum SP80-3280, cana-de-açúcar utilizada anteriormente para estudos de relógio biológico. Os nove acessos foram divididos em dois grupos com base em sua partição de carbono contrastante. HF (high fiber) com mais fibras e perfilho e grupo HS (high sucrose), com maior armazenamento de açúcares e amido que HF, em todos os horários de coleta, e com baixa produção de fibras. Estes grupos não diferem em expressão dos componentes de relógio biológico, no entanto, HS tem maior transcrição de uma subunidade do complexo TOR, em apenas um dos horários analisados (ZT12). Em conjunto, a expressão dos componentes do relógio biológico divide os acessos entre os que possuem altos níveis de transcrição de ScLHY, no ZT03, e os que possuem maior transcrição dos genes PRR59, 73 e 95, no ZT12, grupos com contrastante partição de carbono. A transcrição dos sensores energéticos se correlaciona no começo da noite em acessos de HS e Krakatau e, no começo da manhã, em acessos de HF e IN84-105, sem agrupar as variedades por espécie ou destino de carbono. Este trabalho sugere que há diferentes níveis de correlação entre a transcrição dos genes mensurados e as contrastantes partições de carbono das plantas do complexo Saccharu


Sugarcane and Energycane are intercrossable plants that make up the Saccharum complex. These plants are a source of biomass, sugar, biofuels, electricity among others, and even though they use the energy assimilated by photosynthesis in a contrasting way, both results in high productivity. The biological clock is a molecular mechanism that generates information about the time of day in conjunction with environmental stimuli, adapting physiological responses to optimize the development of organisms in a cyclic environment, a process that regulates about 64% of sugarcane genes in field-grown plants. In organisms such as plants, the recurrent process of energy production that happens only during the luminous period generates rhythmicity that may influence the activity of kinase enzymes, thus giving an energy sensor property for then. However, little is known about how these signs are perceived at the transcriptional level, especially in crops and monocots. To elucidate how these pathways act together in plants of the Saccharum complex, we measured the transcription level of the daytime loop of the biological clock, subunits that make up the TOR complex, and the catalytic subunit of SnRK1, KIN10. We measured starch content in four time points, to obtain a dynamic of production and consumption, a process that is regulated by the biological clock and has genes with a rhythmic expression profile in sugarcane. Interestingly, one of the four varieties where we could identify a probable rhythmic profile of starch consumption is a sugarcane SP80-3280 (S. officinarum), that have been used for biological clock studies. The nine genotypes were divided into two groups based on their contrasting carbon partition. HF (high fiber) with more fiber and tiller and group HS (high sucrose), with higher sugar and starch storage than HF, but with lower fiber production. These groups do not differ in expression of biological clock components; however, HS has a higher transcription of a subunit of the TOR complex, in only one of the analyzed times (ZT12). Together, the expression of components of the biological clock divides the genotypes between those with higher levels of ScLHY in ZT03 and those with more transcripts of PRR59, 73 and 95 genes in ZT12, groups that also have contrasting carbon partition. The transcription of TOR complex correlates in the early evening in HS and KRAKATAU, but in the morning, in HF and IN84-105, with no clear correlation with the C destination preferences. This work suggests that there are different levels of correlation between the transcription of biological clock and energy sensors component genes and the contrasting carbon partitions of plants from the Saccharum complex

Abstract Introduction: The receptor for AGEs (RAGE) is a multiligand member of the immunoglobulin superfamily of cell surface receptors expressed in many organs, among them, the kidneys. When activated, RAGE leads to a sequence of signaling that results in inflammation and oxidative stress, both involved in kidney disease pathogenesis. Gamma-oryzanol (γOz) comprises a mixture of ferulic acid (FA) esters and phytosterols (sterols and triterpene alcohols) mainly found in rice, with antioxidant and anti-inflammatory activities. Aim: To evaluate the effect of γOz to reduce renal inflammation and oxidative stress by modulating AGEs/RAGE axis in animals submitted to a high sugar-fat diet. Methods: Male Wistar rats (±187g) were randomly divided into two experimental groups: control (n = 7 animals) and high sugar-fat diet (HSF, n = 14 animals) for 20 weeks. After this period, when the presence of renal disease risk factors was detected in the HSF group (insulin resistance, dyslipidemia, increased systolic blood pressure and obesity), the HSF animals were divided to begin the treatment with γOz or continue receiving only HSF for 10 more weeks. Results: No effect of γOz on obesity and metabolic parameters was observed. However, kidney inflammation and oxidative stress decreased as soon as RAGE levels were reduced in HSF + γOz. Conclusion: It is possible to conclude that the gamma- oryzanol was effective in reducing inflammation and oxidative stress in the kidney by modulating the AGEs/RAGE axis.


Resumo Introdução: O receptor para AGEs (RAGE) é um membro multiligante da superfamília das imunoglobulinas dos receptores de superfície celular expresso em muitos órgãos, entre eles, os rins. Quando ativado, o RAGE leva a uma sequência de sinalização que resulta em inflamação e estresse oxidativo, ambos envolvidos na patogênese de doenças renais. O gama-orizanol (γOz) compreende uma mistura de ésteres de ácido ferúlico (AF) e fitoesteróis (esteróis e álcoois triterpenos) encontrados principalmente no arroz, com atividades antioxidantes e anti-inflamatórias. Objetivo: Avaliar o efeito do γOz para reduzir a inflamação renal e o estresse oxidativo pela modulação do eixo RAGE/AGEs em animais submetidos a uma dieta rica em gordura e açúcar. Métodos: Ratos Wistar machos (±187g) foram divididos aleatoriamente em dois grupos experimentais: controle (n = 7 animais) e dieta rica em gordura e açúcar (HSF, do inglês high sugar-fat diet, n = 14 animais) por 20 semanas. Após este período, quando foi detectada a presença de fatores de risco de doença renal no grupo HSF (resistência à insulina, dislipidemia, aumento da pressão arterial sistólica e obesidade), os animais HSF foram divididos para iniciar o tratamento com γOz ou continuar recebendo apenas HSF por mais 10 semanas. Resultados: Não foi observado nenhum efeito do γOz na obesidade e nos parâmetros metabólicos. No entanto, a inflamação e o estresse oxidativo renais diminuíram assim que os níveis de RAGE foram reduzidos em HSF + γOz. Conclusão: É possível concluir que o gama- orizanol foi eficaz em reduzir a inflamação e o estresse oxidativo no rim pela modulação do eixo RAGE/AGEs.

Diversos estudios epidemiológicos y de intervención apuntan a una asociación fuerte y consistente entre la ingesta excesiva de azúcares y el riesgo de desarrollar caries dentales y enfermedades crónicas no transmisibles. El objetivo fue describir los 10 principales alimentos que contribuyen a la ingesta de azúcares añadidos en muestras representativas de poblaciones urbanas de ocho países latinoamericanos, y considerar diferencias por país, sexo, nivel socioeconómico (NSE) y grupo de edad. Se realizó una encuesta transversal multinacional en hogares de Argentina, Brasil, Chile, Colombia, Costa Rica, Ecuador, Perú y Venezuela (N=9218; 15­65 años). La contribución porcentual a la ingesta total del nutriente sirvió para identificar los alimentos aportadores. Los datos se estratificaron por país, sexo, NSE y grupo de edad y se compararon los gramos por día. Excepto en Perú y en el grupo de 50 a 65 años, los refrescos figuraron como el principal contribuyente a la ingesta de azúcares añadidos. Las bebidas caseras y las industrializadas también destacaron. Argentina fue el país con mayor ingesta de azúcares añadidos aportados por bebidas industrializadas, y Chile el país con menor frecuencia de bebidas como fuentes. Entre los 10 contribuyentes, la ingesta de azúcares añadidos fue mayor en el sexo masculino, excepto para sacarosa y pasteles dulces. Mayores ingestas de azúcares provenientes del jugo de fruta natural y sacarosa fueron observadas en el NSE más bajo. Las mayores y menores ingestas en los grupos de edad cambian de acuerdo con la fuente alimentaria. En conclusión, las bebidas azucaradas fueron los principales contribuyentes a la ingesta de azúcares añadidos, y la ingesta varió según la ubicación geográfica y los factores sociodemográficos(AU)


This study aimed to describe the top 10 foods that contribute to added sugars intake in representative samples of urban populations in eight Latin American countries, and consider differences by country, sex, socioeconomic level (SEL), and age group. A household-based, multinational, cross-sectional survey was conducted in Argentina, Brazil, Chile, Colombia, Costa Rica, Ecuador, Peru, and Venezuela (N=9218; 15­65 years). Contributors to added sugars were identified and listed based on the percentage of contribution to total intake of this nutrient. Data were stratified by country, sex, SEL, and age group, and the grams per day compared. Except in Peru and in the 50 to 65 years age group, soft drinks were the leading contributor to added sugar intake. Homemade beverages together industrialized beverages have been a prominent position on ranking. In general, the highest intake of added sugars by industrialized beverages was from Argentina, and the lowest frequency of beverages as sources of added sugars was observed in Chile. Among the top 10 contributors, male sex had highest added sugar intake, except for sucrose and sweet cakes. Higher intakes of sugars from natural fruit juice and sucrose were observed in the lower SEL. The highest and lowest intakes in the age groups change according to the food source. In conclusion, sugar-sweetened beverages were main contributors to added sugar intake, and the intake vary with geographical location and sociodemographic factors(AU)

Introducción: la ingesta elevada de azúcares agregados se asocia con enfermedades crónicas no transmisibles. El objetivo fue analizar la ingesta de azúcares agregados en la población argentina por etapa del ciclo vital y según nivel de ingreso, e identificar las principales fuentes alimentarias. Materiales y método: estudio descriptivo y transversal, basado en datos secundarios. Se analizó información recolectada en la Encuesta Nacional de Nutrición y Salud 2005, y la Primera Encuesta Alimentaria Nutricional de la Ciudad de Buenos Aires 2011. Se calculó la ingesta total de azúcares agregados, expresado en gramos por día y proporción de la energía total diaria. Se identificaron los principales alimentos o bebidas aportadores de azúcares agregados. La ingesta se comparó con las recomendaciones de la Organización Mundial de la Salud y se estratificó según el quintil de ingresos per cápita del hogar. Se realizó análisis estadístico descriptivo considerando la ponderación muestral, la asociación fue evaluada mediante análisis de regresión lineal y logística. Resultados: se observó asociación entre la ingesta de azúcares agregados y el nivel de ingresos, con cambios en el consumo a lo largo del ciclo vital, alcanzando el máximo durante la adolescencia. El consumo promedio fue superior al límite máximo recomendado en los grupos etarios evaluados, excepto en los adultos mayores de 60 años. El azúcar de mesa, gaseosas y jugos fueron las principales fuentes. Discusión: el elevado consumo de azúcares agregados observado y su asociación con el nivel de ingresos requiere estrategias acordes a las características de cada grupo poblacional(AU).


Introduction: high consumption of added sugars is associated with non-communicable diseases. The objective was to analyze the added sugar intake by life cycle and income level in the Argentine population, and to identify the main food sources. Materials and methods: a descriptive and cross-sectional study was carried out based in secondary data, the National Survey of Nutrition and Health 2005 and the First Food and Nutrition Survey of Buenos Aires City 2011. Added sugar intake was calculated, expressed in grams per day and proportion of total daily energy. Principal foods and beverages sources of added sugars were identified. Added sugar intake was compared with the World Health Organization´s recommendations, considering income quintile by household member. A descriptive statistical analysis was carried out considering the sample weight, the association was evaluated by linear and logistic regression analysis. Results: an association was found between added sugar intake and income level, with changes throughout the life cycle, with a highest consumption during adolescence. The average consumption was higher than the recommendations in the age groups evaluated, except in adults over 60s. Table sugar and sweetened beverages were the main sources. Conclusion: the high consumption of added sugars observed and its association with income level requires strategies according to the characteristics on each population group(AU).

Abstract Introduction: Obesity, diabetes, and hypertension are common risk factors for chronic kidney disease (CKD). CKD arises due to many pathological insults, including inflammation and oxidative stress, which affect renal function and destroy nephrons. Rice bran (RB) is rich in vitamins and minerals, and contains significant amount of antioxidants. The aim of this study was to evaluate the preventive effect of RB on renal disease risk factors. Methods: Male Wistar rats (±325 g) were divided into two experimental groups to received a high sugar-fat diet (HSF, n = 8) or high sugar-fat diet with rice bran (HSF + RB, n = 8) for 20 weeks. At the end, renal function, body composition, metabolic parameters, renal inflammatory and oxidative stress markers were analyzed. Results: RB prevented obesity [AI (HSF= 9.92 ± 1.19 vs HSF + RB= 6.62 ± 0.78)], insulin resistance [HOMA (HSF= 83 ± 8 vs. HSF + RB= 42 ± 11)], dyslipidemia [TG (HSF= 167 ± 41 vs. HSF + RB=92 ± 40)], inflammation [TNF-α (HSF= 80 ± 12 vs. HSF + RB=57 ± 14), IL-6 (903 ± 274 vs. HSF + RB=535 ± 277)], oxidative stress [protein carbonylation (HSF= 3.38 ± 0.18 vs. HSF + RB=2.68 ± 0.29), RAGE (HSF=702 ± 36 vs. RSF + RB=570 ± 190)], and renal disease [protein/creatinine ratio (HSF=1.10 ± 0.38 vs. HSF + RB=0.49 ± 0.16)]. Conclusion: In conclusion, rice bran prevented renal disease by modulating risk factors.


Resumo Introdução: Obesidade, diabetes e hipertensão arterial são fatores de risco comuns para doenças renais crônicas (DRC). A DRC surge devido a muitos insultos patológicos, incluindo inflamação e estresse oxidativo, que afetam a função renal e destroem os néfrons. O farelo de arroz (FA) é rico em vitaminas e minerais, e contém uma quantidade significativa de antioxidantes. O objetivo deste estudo foi avaliar o efeito preventivo do FA nos fatores de risco de doenças renais. Métodos: Ratos Wistar machos (±325 g) foram divididos em dois grupos experimentais para receber uma dieta rica em gordura e açúcar (DRGA, n = 8) ou uma dieta rica em gordura e açúcar com farelo de arroz (DRGA + FA, n = 8) por 20 semanas. Ao final, foram analisados a função renal, composição corporal, parâmetros metabólicos, marcadores renais inflamatórios e de estresse oxidativo. Resultados: FA preveniu a obesidade [IA (DRGA= 9,92 ± 1,19 vs. DRGA + FA= 6,62 ± 0. 78)], resistência à insulina [HOMA (DRGA= 83 ± 8 vs DRGA + FA= 42 ± 11)], dislipidemia [TG (DRGA= 167 ± 41 vs. DRGA + FA=92 ± 40)], inflamação [FNT-α (DRGA= 80 ± 12 vs. DRGA + FA=57 ± 14), IL-6 (903 ± 274 vs. DRGA + FA= 535 ± 277)], estresse oxidativo [carbonilação de proteína (DRGA= 3. 38 ± 0,18 vs. DRGA + FA=2,68 ± 0,29), RAGE (DRGA=702 ± 36 vs. DRGA + FA=570 ± 190)], e doença renal [relação proteína/creatinina (DRGA=1,10 ± 0,38 vs. DRGA + FA=0,49 ± 0,16)]. Resumo O objetivo foi avaliar a disponibilidade da informação sobre quantidade de açúcar e identificar sua posição na lista de ingredientes em alimentos industrializados. Este estudo caracteriza-se como transversal, com análise de todos os alimentos industrializados tradicionais, diet, light e zero comercializados em um hipermercado de grande porte, que contivessem na lista de ingredientes as palavras açúcar ou sacarose. A declaração da quantidade e a posição do açúcar na lista de ingredientes foram registrados após observação do rótulo. A informação de quantidade de açúcar também foi solicitada às indústrias de alimentos, por e-mail ou telefone. Foram analisados 2200 alimentos, sendo 2164 (98,4%) tradicionais e 36 (1,6%) diet, light e zero, nos quais a declaração da quantidade de açúcar foi observada em apenas 14,4% e 13,9% dos alimentos, respectivamente (p=0,84). Das 156 empresas contatadas, apenas 7,7% (n=12) disponibilizaram as informações solicitadas. Dentre os alimentos tradicionais, 75,8% apresentam o açúcar nas três primeiras posições da lista de ingredientes, enquanto nos diet, light e zero, 77,8% (p=0,93). Conclui-se que o açúcar é o principal ingrediente em grande parte dos alimentos analisados e que a disponibilidade de informação de sua quantidade é baixa.


Abstract The objective of this study was to assess the provision of information on the amount of sugar and identify the position of sugar in the list of ingredients of processed foods. A cross-sectional study was conducted to analyze all processed traditional and diet/light/zero food products sold in a hypermarket containing the word sugar or sucrose in the list of ingredients. The food labels were read and the position of sugar on the list of ingredients and presence, or absence, of information on the amount of sugar in the nutrition facts table were recorded. Information on the amount of sugar was also requested from the manufacturers by e-mail or telephone. A total of 2,200 food products were assessed, 2,164 (98.4%) of which were traditional foods and 36 (1.6%) diet/light/zero foods. The amount of sugar was declared in only 14.4% and 13.9% of these products, respectively (p=0.84). Only 7.7% (n=12) of the 156 companies contacted provided the requested information. Sugar was present in the first three positions of the list of ingredients in 75.8% of the traditional foods and 77.8% of the diet/light/zero foods (p=0.93). The data show that sugar was the main ingredient in the majority of the food products analyzed and that the level of provision of information on the amount of sugar is low.

Resumo: O Brasil foi o primeiro país a comprometer-se com a Década da Ação em Nutrição da Organização das Nações Unidas, com metas ambiciosas relativas ao controle da obesidade e à redução do consumo de bebidas açucaradas. Neste estudo, descrevemos as iniciativas legislativas relacionadas à tributação de bebidas açucaradas apresentadas no Congresso Nacional durante os primeiros quatro anos da Década e a situação do processo decisório. Foram buscadas, nas bases de dados da Câmara dos Deputados e do Senado Federal, todas as propostas apresentadas entre 2016 e 2019 que tratassem do tema, sendo apresentados os resultados de forma narrativa, descrevendo-se o conteúdo dos projetos e a situação da tramitação. Ao todo, foram identificadas dez propostas. Seis delas visam ao aumento da tributação e ainda se encontram em apreciação de Comissões na Câmara dos Deputados. Quatro propostas buscavam sustar um ato normativo que resultou no aumento da tributação sobre concentrados de refrigerantes e foram rejeitadas e arquivadas. Ainda há um longo caminho a ser percorrido para o aumento da tributação das bebidas açucaradas no país. A complexidade e a morosidade do processo decisório no Congresso Nacional impõem dois riscos: que nenhum projeto seja convertido em lei ou, caso o seja, que não cause qualquer impacto na saúde pública até 2025.


Abstract: Brazil was the first country to commit to the United Nations' Decade of Action on Nutrition with ambitious goals related to controlling obesity and reducing the intake of sugar-sweetened beverages. In this study, we describe legislative efforts related to sugar-sweetened beverage taxation introduced in the Brazilian Legislature throughout the first four years of this decade as well as the status of the decision-making process. We searched databases within the Chamber of Deputies and the Federal Senate for legislative proposals introduced between 2016 and 2019 that addressed sugary drinks taxation. The results are presented narratively. The content of the bills and status of the legislative process are described. Ten bills were identified. Six of them are aimed at raising taxes and are currently under consideration in the Committees by the first legislative House. Four bills had been aimed at repealing an act which increased taxes on soft drink concentrates, but they have since been rejected and archived. There still seems to be a long road ahead before taxes on sugar-sweetened beverages are raised in Brazil. The lawmaking process in the Brazilian Legislature is complex and slow. This poses two risks: no law being passed; or enacted legislation not being capable to cause significant impact on public health by 2025.

En este estudio, describimos las iniciativas legislativas relacionadas con la tributación de bebidas azucaradas, presentadas en el Congreso Nacional durante los primeros cuatro años de la Década, y la situación del proceso decisorio. Se buscaron en las bases de datos de la Cámara de los Diputados y del Senado Federal todas las propuestas presentadas entre 2016 y 2019 que tratasen el tema. Todavía hay un largo camino por recorrer para el aumento de la tributación de las bebidas azucaradas en el país. La complejidad y la tardanza del proceso decisivo en el Congreso Nacional imponen dos riesgos: que ningún proyecto sea convertido en ley o, en caso de que lo sea, que no cause cualquier impacto en la salud pública hasta 2025.
